The presence of sugar in every supermarket bread in the US drives me insane. Finding bread that’s only flour, water, salt, yeast is close to impossible. And then the flour is the problem anyways. Great essay Matt, connecting the dots of something that’s been bothering me for so long!

I make my own bread and have done for years. Most of what I make is sourdough because of the health benefits of fermented grain, but it is possible to make any bread recipe “better” by subbing in sourdough “discard” (which is unfed sourdough starter, perfectly fine to use in all kinds of baking).

Just kidding, I love the article and couldn't agree more. A great way to get good bread into your diet is to make your own pizza dough. A good Neapolitan crust is super easy to make and even if your first few goes aren't great it is still going to be better than store bought, I promise you.
